The Story

Provaré means “to try” in Italian, and the name is autobiography: self-taught chef Jourdan Higgs, who honed his craft through YouTube rather than culinary school, blended his Sicilian roots with Creole flavor and opened a tiny room in 2021. Demand outgrew it fast — the restaurant moved into its current, larger West Town space and picked up a Michelin Guide listing along the way.

What to Order

Go big: the Provaré Royale Tower for a showstopping start, fried calamari with jalapeños and banana peppers, then lamb chops, steak frites or the seafood trio over housemade pasta. The butter cake with vanilla ice cream and strawberries — his pastry-chef mother’s recipe — is the only dessert, and the only one you need.

The Space

Intimate and moody, with dark walls, chic accents and a neon “Be Ready to Try” sign begging for a photo. It feels like a members’ club without the membership, and when dinner winds down, the Privé speakeasy downstairs keeps the night going with DJs and cocktails named for Chicago neighborhoods.
